Tomato Ketchup
This recipy is my own experiment. It is both sweet and tangy.
5 lbs tomatoes, chopped (no need to seed or remove skin)
2 large onions, chopped
1 green bell pepper, chopped
4 apples, peeled, cored and chopped
1 cup celery, chopped
2 cups vinegar
1 cup sugar
2 t. cinnamon
2 t. mustard seed
Put all ingredients together in big pot, bring to boil and then simmer about 4 hours. It has to reduce quite a bit. Then process through blender. Pack into jars (leave 1\2 inch at top). Process 30 minutes. Most of the recipies I found on the net that were similar had approx. 30 minute water bath.
